Cantillon Cuvée St Gilloise 2024, also known as Cuvée des Champions, has a fresh nose with notes of citrus, lime, cedar and aromatic yellow fruits, supplemented with sweet and spicy accents. The taste reflects this complexity with citrus notes such as lime and grapefruit, followed by malt and lemon juice, resulting in a dry, sharp and refreshing finish.

This beer is not a traditional gueuze, because it is made exclusively from two-year-old lambic, without the mixing of younger lambics. It is dry hopped in the barrel for three weeks with Hallertau Mittelfrüh hops, and the refermentation in the bottle is stimulated by a small addition of candy sugar.
