Green Walnut' is a surprising and innovative lambic beer from Oud Beersel. Just like with Oude Kriek Oud Beersel, only real fruit is used for the production of Green Walnut. In the month of July, the still green walnuts are picked in the orchard of Oud Beersel and added to lambic that has matured in wooden wine barrels. Through the contact with the lambic, the green walnuts give off flavor and aroma. The original bitterness of the nuts softens as the nut lambic matures. This results in a delicate balance between the slightly sour lambic and the bitterness of the green walnuts. The wooden wine barrels add a subtle touch of red fruit to the beer. After refermentation in the bottle, this sparkling nut lambic from Oud Beersel is known as 'Green Walnut'
