The Vliegende Paard Brewers have undertaken a special project by aging their already delicious Quadrupel on wood. This variant is specifically aged in Rémy Martin Cognac barrels for about a year, with the barrels still infused with the distinctive Cognac. The result is a deep chestnut brown beer with a lush, thick cream-colored head that clings to the glass for a long time. There is little notable activity in the glass.
What a scent! The aroma offers delightful vanilla-like chocolate notes, dark malt, and caramelized sugar. There is also an earthy smell of wet wood. The alcohol is pleasantly noticeable, bringing a lightly sweet Cognac aroma infused with fruity hints of small red plums. The beer has a rich and complex character. The mouthfeel is creamy and full, making the beer very enjoyable to drink.
The vanilla tones and chocolate also come through in the flavor, along with a lightly sweet fruitiness of ripe fruits like plums and apples. The alcohol is clearly present but not intrusive, rather warming. There is a subtle smoky edge and a woody accent from the barrel, pushing the beer towards the bounds of a robust stout. The flavor lingers well, with a subtle bitterness. The aftertaste is rather dry in the mouth.
