Brasserie Cantillon
Brewery Cantillon, located in Anderlecht near the Brussels-Midi station, was the last remaining artisan lambic brewery in Brussels until 2020. This brewery was founded in 1900 by Paul Cantillon and is still managed by the Van Roy-Cantillon family.
In addition, the brewery houses the Brussels Museum of Gueuze, which was founded in 1978 by the initiative of Jean-Pierre Van Roy. The brewmaster's original goal was simple: to preserve Cantillon Brewery.
It is important to note that the spontaneous fermentation and resulting beer products that are so popular and appreciated today were once considered old-fashioned. The idea behind the museum was therefore to preserve and promote a brewing tradition that was still flourishing at the beginning of the 20th century.
