Bombrewery
BOM, short for Belgian Original Malt Bakery, was founded by brewing engineer Bert Van Hecke. What started as a passion project grew into a unique brewery that distinguishes itself by using home-roasted malt – the so-called BOM packages. Each beer is given a carefully composed custom malt package, fully developed by Bert himself.
Bert started his career as a hobby brewer and learned the trade from the best. He interned at the iconic Trappist brewery Orval and at Rodenbach, known for its authentic Flemish red-brown beers. He worked as a cellar master at the Boon gueuze brewery, and as a brew master at Brouwerij Sint-Bernardus. His international experience was gained in Fort Collins (US), Brooklyn (US), Suzhou (China) and Galati (Romania), among others, and he even became a jury member at the prestigious World Beer Cup.
Bert built breweries from scratch in Austin (Texas), where the legendary Pierre Celis white beer was revived, and in Franschhoek (South Africa), where he applied his own BOM BREW design.
His drive for innovation led him to start making malt himself. Inspired by the old techniques of Rodenbach, he bought a coffee roastery and converted it into a malt bakery. By slowly and controlled roasting of white malt, he creates unique malt varieties, which he uses in the brewing process within 48 hours - for maximum freshness and taste.
As a so-called gypsy brewer, Bert brews his beers in rented kettles, but always retains full control himself. From roasting the malt to brewing and following up every detail – he personally oversees the entire process, from A to Z.
At BOM Brewery, everything revolves around character, craftsmanship and taste. Each beer is a unique creation, born from experience, passion and a touch of Belgian idiosyncrasy.
