The Vliegende Paard Brouwers have realized a special project by letting their already tasty Quadrupel ripen on wood. This variant is specifically aged in Remy Martin Cognac barrels for about a year, where the barrels are still infused with the characteristic Cognac. The result is a deep chestnut brown beer with a lush, thick cream-colored head that clings to the glass for a long time. There is little noticeable activity in the glass. What a smell! The aroma offers delicious vanilla-like chocolate notes, dark malt and candy sugar. An earthy smell of wet wood is also present. The alcohol is nicely perceptible and brings with it a slightly sweet Cognac scent, infused with fruity hints of small red plums. The beer has a rich and complex character. The mouthfeel is creamy and full, making the beer pleasant to drink. The vanilla notes and chocolate also come to the fore in the taste, along with a slightly sweet fruitiness of ripe fruit, such as plums and apples. The alcohol is clearly present but not disturbing, rather warming. There is a subtle smoky edge and a wooden accent from the cask, which pushes the beer towards the limits of a stout. The taste lingers well, with a subtle after-bitterness. The finish is rather dry in the mouth.
