From deep in the heart of Brussels comes a beer that captures the wild and idiosyncratic character of the city. Bruxellensis Reserva is a special, matured version of the famous Bruxellensis, a beer that takes its name and soul from the iconic Brettanomyces bruxellensis yeast – a strain that originated in the vibrant, unpolished surroundings of Saint-Gilles. A yeast with character, found in the wild, that adds an unmistakable complexity and liveliness to any beer in which it is allowed to flourish.

For this Reserva edition, the beer was given the time and space to mature in carefully selected old red wine barrels, for several months. This barrel aging enriches the beer with an elegant palette of red and black berries – think wild strawberry, blackberry, blueberry and candied cherry – which are beautifully interwoven with the fine wood notes of the barrel itself.

The aroma is distinct and intriguing: fruity, sweet and sour, with subtle aromas of old leather, herbs and wet oak, typical of the maturation with Brett. In the mouth, the beer presents itself as a taste explosion of layered fruit, supported by a refreshing acidity and a light tannin structure that gives the beer something wine-like. The wood aging provides depth, while the Brettanomyces provides a wild, almost rustic character – without being overpowering.
