The Boon Brewery has never before allowed Lambic to mature in the foeder for a "KAT" production for longer than 3 years. Nevertheless, they decided to let foeder N° 31 do its thing and bottled the lambic in this oak barrel after 4 and a half years. VAT 31 has become a delicate, soft-fine Oude Geuze with a fine sparkle and a pleasant cognac-like scent.
The velvety soft, yet firm aroma of VAT 31 has notes of apricot and nuts and is supported by a clear oak character.
